Ingredients

Scale

Pie Crust

  • 1 refrigerated or homemade 8- or 9-inch pie crust

Custard Filling

  • 4 large egg yolks, lightly beaten
  • 2 1/2 cups (600 ml) heavy whipping cream
  • 2/3 cup (150 g) packed light brown sugar
  • 1/3 cup (45 g) cornstarch, sifted
  • 1/2 teaspoon salt
  • 1/2 cup (120 ml) honey
  • 2 teaspoons vanilla extract
  • Flaky sea salt, for sprinkling on top

Instructions

  1. Prepare the Pie Crust: Place the pie crust into a deep dish 8-inch or 9-inch pie pan. Chill it in the refrigerator while preparing the filling to prevent shrinking and ensure even baking. For extra flavor, optionally sprinkle a little sugar on the crust before baking.
  2. Heat the Cream Mixture: In a medium saucepan, combine heavy cream, brown sugar, cornstarch, and salt. Heat over medium heat, stirring constantly until it reaches a rolling boil and thickens slightly.
  3. Temper the Eggs: Remove the cream mixture from heat. Slowly ladle a small amount into the beaten egg yolks while whisking to gradually warm them. Continue adding more cream mixture incrementally, whisking until smooth and fully combined, avoiding curdling.
  4. Combine the Mixture: Pour the tempered egg mixture back into the saucepan with the remaining cream mixture. Stir well and add honey and vanilla extract, mixing thoroughly to incorporate.
  5. Fill the Pie Crust: Pour the warm custard filling evenly into the chilled pie crust, spreading carefully to avoid air pockets.
  6. Bake the Pie: Bake in a preheated 375°F (190°C) oven for 40-45 minutes until the filling bubbles and the top becomes golden brown. The center may still jiggle slightly when done.
  7. Cool and Set: Cool the pie at room temperature until it reaches room temp, then refrigerate until fully chilled and firm to allow the custard to set perfectly.
  8. Finish with Sea Salt: Just before serving, sprinkle a generous amount of flaky sea salt over the top to enhance the sweet and creamy flavors.
  9. Serve and Enjoy: Slice into 8-10 portions and serve chilled for a creamy, balanced dessert experience.

Notes

  • Chilling the pie crust before baking prevents shrinking and ensures flakiness.
  • Tempering the eggs is crucial to avoid scrambled custard texture.
  • Don’t overbake to prevent grainy filling; slight jiggle is ideal on removal.
  • Use high-quality honey for the best flavor impact.
  • Flaky sea salt adds a delightful texture and flavor contrast.
  • Refrigerate fully before serving to achieve perfect custard consistency.
