5 from 7 reviews

A hearty and flavorful dish featuring savory sausage and tender sweet potatoes, all coated in a sweet and garlicky honey soy sauce. Perfect for a comforting weeknight meal with a touch of warmth from paprika and a fresh finish of parsley.

Ingredients

Scale

Sausage and Vegetables

  • 1 lb sausage (Italian or chicken)
  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Honey Garlic Sauce

  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon paprika

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients: Peel the sweet potatoes and cut them into cubes, set aside for cooking.
  2. Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sausage and cook until browned, approximately 5-7 minutes, stirring occasionally to ensure even browning.
  3. Add Sweet Potatoes: Add the cubed sweet potatoes to the skillet with the sausage. Stir to combine and cook for an additional 5 minutes, allowing the sweet potatoes to lightly brown.
  4. Make the Sauce: While the sausage and sweet potatoes cook, in a small bowl, mix together the honey, minced garlic, soy sauce, paprika, salt, and pepper until well combined. Pour this sauce evenly over the sausage and sweet potatoes in the skillet.
  5. Simmer: Cover the skillet with a lid and let the mixture simmer on medium-low heat for about 10 minutes, or until the sweet potatoes are tender and the sauce has thickened slightly.
  6. Serve: Remove the lid, give everything a gentle stir to coat evenly, garnish with freshly chopped parsley, and serve warm.

Notes

  • Use chicken sausage for a leaner protein option.
  • For a gluten-free version, substitute soy sauce with tamari.
  • Adjust the honey amount if you prefer a sweeter or less sweet sauce.
  • Fresh parsley adds a bright herbaceous flavor but can be omitted or replaced with cilantro.
  • Ensure sweet potatoes are cut into uniform cubes for even cooking.
