Ingredients

Scale

Shrimp and Creamed Corn

  • 1 lb medium or large shrimp, peeled and deveined
  • 3 cups fresh, frozen, or canned corn (drained)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 3 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup heavy cream (or half-and-half)
  • ½ cup whole milk
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional, for heat)
  • 2 tbsp fresh chives or green onions, chopped
  • Optional: 2 slices bacon, cooked and crumbled

Instructions

  1. Saute Onions: Melt butter in a large skillet over medium heat. Add finely chopped onion and cook until soft and translucent, about 3 to 4 minutes.
  2. Add Garlic: Stir in minced garlic and cook for about 1 minute until fragrant, making sure not to burn it.
  3. Cook Corn: Add the corn to the skillet and cook for 4 to 5 minutes to enhance its natural sweetness while stirring occasionally.
  4. Coat with Flour: Sprinkle the all-purpose flour evenly over the corn mixture, stirring to coat the corn and form a roux base for thickening.
  5. Add Cream and Milk: Gradually pour in the heavy cream and whole milk, stirring constantly to prevent lumps. Continue stirring until the mixture thickens to a creamy consistency.
  6. Season the Mixture: Add sugar, salt, black pepper, and cayenne pepper if using. Stir well to evenly distribute the seasonings.
  7. Cook the Shrimp: Nestle the peeled and deveined shrimp into the creamed corn. Cook for 2 to 3 minutes on each side, or until the shrimp turn pink and opaque, indicating they are fully cooked.
  8. Finalize and Serve: Taste and adjust seasoning as needed. Sprinkle fresh chopped chives or green onions and crumbled crispy bacon on top if desired. Serve hot for best flavor.

Notes

  • Use fresh shrimp for best flavor, but frozen shrimp will also work well once properly thawed.
  • Substitute half-and-half for heavy cream to reduce fat content without sacrificing too much creaminess.
  • For a spicier dish, increase the cayenne pepper or add a pinch of smoked paprika.
  • Bacon is optional but adds a delicious smoky crunch that complements the creaminess.
  • Leftovers keep well refrigerated for up to 2 days and can be gently reheated on the stove.
