Ingredients

Scale

Shrimp and Seasoning

  • 1.5 lb raw shrimp (peeled and deveined)
  • 1 teaspoon chili powder
  • ¼ teaspoon salt (to taste)
  • 1 teaspoon smoked paprika

Corn and Cream Sauce

  • 1.5 cups cooked corn kernels
  • 1 cup half-and-half
  • ½ cup chopped onion
  • 5 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter

Finishing Touches

  • 4 oz feta cheese (crumbled)
  • 2 small limes
  • Fresh cilantro (for garnish)

Instructions

  1. Season the Shrimp: In a bowl, combine the peeled and deveined shrimp with chili powder and salt. Toss well to coat evenly and set aside.
  2. Sauté Aromatics: Heat the olive oil and salted butter together in a large skillet over medium heat. Add the chopped onions and sauté until they become translucent, about 3-4 minutes. Then add the minced garlic and cook until fragrant, approximately 1 minute.
  3. Cook the Corn: Stir the cooked corn kernels and smoked paprika into the skillet. Let them heat through for 3 to 4 minutes, stirring occasionally to combine the flavors.
  4. Cook the Shrimp: Increase the heat to medium-high. Add the seasoned shrimp to the skillet and cook until the shrimp turn pink and opaque, about 3 to 4 minutes, flipping halfway if needed for even cooking.
  5. Add Cream and Simmer: Pour in the half-and-half and gently simmer the mixture for 2 to 3 minutes, allowing the sauce to thicken slightly and envelop the shrimp and corn.
  6. Finish and Garnish: Crumble half of the feta cheese into the skillet and stir to incorporate. Squeeze the juice of the two limes over the dish and garnish with fresh cilantro. Serve immediately.

Notes

  • Use fresh or frozen corn kernels that are fully cooked before starting the recipe.
  • Shrimp can be substituted with scallops or chunks of firm white fish if preferred.
  • Adjust chili powder and smoked paprika quantities according to desired spice level.
  • For a dairy-free version, substitute half-and-half and feta cheese with suitable alternatives.
  • Serve with crusty bread or over rice to make a complete meal.
