Ingredients

Scale

Meat Mixture

  • 1 lb ground beef
  • ½ cup white onion (diced)
  • 2 tbsp olive oil
  • 1 cup tomato sauce
  • 1 tbsp yellow mustard
  • ¼ cup ketchup
  • 2 tbsp BBQ sauce
  • ½ tsp salt

Assembly

  • 1 9 oz bag tortilla chips
  • 1½ cups shredded cheddar cheese
  • ½ cup dill pickle slices (roughly chopped)
  • Sour cream (for serving)
  • Green onion (sliced for garnish)

Instructions

  1. Sauté Onions: Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3–5 minutes until softened and translucent.
  2. Cook Ground Beef: Add the ground beef to the skillet and cook, breaking it up as it browns, for 7–10 minutes. Drain excess grease if necessary to avoid sogginess.
  3. Add Sauce Ingredients: Stir in the tomato sauce, yellow mustard, ketchup, BBQ sauce, and salt. Lower the heat, and let the mixture simmer for 3–5 minutes until the sauce thickens and coats the beef well.
  4. Preheat Oven: While the beef mixture simmers, preheat your oven to 400°F (204°C). Line a 9×13-inch baking sheet with parchment paper to prepare for baking.
  5. Arrange Chips and Topping: Spread the tortilla chips evenly across the lined baking sheet. Spoon the sloppy joe beef mixture evenly over the chips, ensuring good coverage.
  6. Add Cheese: Sprinkle the shredded cheddar cheese evenly over the entire surface of the chips and beef mixture.
  7. Bake Nachos: Place the baking sheet uncovered in the oven and bake for 7–10 minutes, or until the cheese is fully melted and bubbly.
  8. Garnish and Serve: Remove the nachos from the oven and immediately top with roughly chopped dill pickles, dollops of sour cream, and sliced green onions. Serve hot and enjoy your Sloppy Joe Nachos!

Notes

  • For a spicier version, add some diced jalapeños or a dash of hot sauce to the beef mixture.
  • If you prefer, you can use ground turkey or chicken as a leaner protein substitute.
  • Feel free to add black beans or corn for extra texture and nutrients.
  • Use freshly grated cheddar cheese for better melting quality and flavor.
  • Leftover sloppy joe mixture can be refrigerated separately and reheated before assembling nachos.
