  • 1/2 cup shredded reduced-fat cheddar cheese
  • 8 teaspoons fresh cilantro leaves

Instructions

  1. Prepare the slow cooker: Place the sliced green, red, and yellow peppers along with the cut onion into the bottom of a 5-quart slow cooker. Arrange the thinly sliced beef top sirloin strips evenly on top of the vegetables.
  2. Make the marinade and cook: In a separate bowl, combine water, red wine vinegar, lime juice, ground cumin, chili powder, salt, garlic powder, black pepper, and cayenne pepper. Pour this mixture evenly over the beef and vegetables in the slow cooker. Cover with the lid and cook on low heat for 8 to 10 hours until the beef is tender and the flavors have melded.
  3. Assemble the fajitas: Once cooked, use a slotted spoon to scoop about 3/4 cup of the meat and vegetable mixture into the center of each warmed flour tortilla. Top each with salsa, shredded reduced-fat cheddar cheese, and fresh cilantro leaves.
