Ingredients

Scale

Cobbler Batter

  • ⅓ cup unsalted butter, melted
  • ¾ cup whole milk
  • 2 teaspoons vanilla extract
  • 1 ½ cups sugar
  • 1 ½ cups all-purpose flour
  • 2 ¼ teaspoons baking powder
  • ¾ teaspoon salt
  • 2 teaspoons cinnamon

Topping and Assembly

  • 1 ½ cups brown sugar, packed
  • 1 ½ cups hot water
  • ¼ cup sugar
  • ½ teaspoon cinnamon

Instructions

  1. Preheat the oven: Set the oven temperature to 350°F (175°C) and prepare a 9×13-inch baking pan by pouring the melted butter into it, spreading evenly to cover the bottom.
  2. Prepare the batter: In a large bowl, whisk together the milk, vanilla extract, and sugar until combined. Gradually add the flour, baking powder, salt, and cinnamon, whisking gently until just combined to form the batter.
  3. Assemble the cobbler: Spoon the prepared batter evenly over the melted butter in the baking pan without stirring them together. Sprinkle the packed brown sugar evenly over the batter. Carefully pour the hot water over the entire mixture without stirring to allow the layers to form during baking.
  4. Bake: Place the pan in the preheated oven and bake for 30 to 35 minutes, or until the top is golden brown and mostly set but still slightly jiggly in the center.
  5. Add the topping: While the cobbler is still hot from the oven, mix the ¼ cup sugar and ½ teaspoon cinnamon in a small bowl, then sprinkle this cinnamon-sugar mixture evenly over the cobbler surface.
  6. Cool and serve: Allow the cobbler to cool for a few minutes to set before serving. For the best experience, serve warm with a scoop of vanilla ice cream on top.

Notes

  • Use a 9×13-inch baking pan to ensure proper cooking and layering.
  • Do not stir the batter, brown sugar, and water after assembling to allow the cobbler’s layering effect.
  • For a richer flavor, whole milk is recommended, but you can substitute with 2% milk if preferred.
  • Serve warm for the best texture and flavor.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated gently.
