  • 2 tbsp soy sauce
  • 2 tbsp water or broth from dumplings (if boiling dumplings)
  • 1 tbsp doubanjiang
  • 1/2 tbsp chili oil or chili garlic sauce
  • 23 tsp sugar (adjust to desired sweetness)
  • 2 tbsp Chinese black vinegar (or rice vinegar)
  • 2 tsp sesame oil
  • 1/2 tsp sesame seeds
  • 1 tsp minced garlic
  • Chopped fresh scallions, for garnish
  • Chopped fresh coriander, for garnish

Instructions

  1. Prepare the dipping sauce: In a small bowl, mix together soy sauce, water or dumpling broth, doubanjiang, chili oil or chili garlic sauce, sugar, Chinese black vinegar, sesame oil, sesame seeds, and minced garlic. Adjust the sugar and chili level to your taste for the perfect balance of sweet, spicy, and tangy flavors.
  2. Cook the dumplings: You can either steam or boil your dumplings. For steaming, line a bamboo steamer with parchment paper, place the dumplings inside and steam from fresh or frozen for 12-15 minutes until cooked through. If boiling, bring a pot of water to a boil and add dumplings directly from frozen. Cook for 3-4 minutes or until the dumplings float to the surface.
  3. Reserve dumpling water: If boiling, save about 2 tablespoons of the dumpling cooking water to add to the dipping sauce for more flavor and liquid consistency.
  4. Serve: Serve steamed or boiled dumplings hot with the prepared dipping sauce on the side. You can also pour the sauce over the dumplings for extra flavor. Garnish with chopped fresh scallions and coriander. For extra heat, add more chili oil or sauce as desired.
