Introduction

These strawberry brownies are a delightful twist on traditional chocolate brownies, bringing a burst of fruity flavor and vibrant pink color. Made with strawberry cake mix and a creamy strawberry frosting, they’re perfect for spring gatherings or any time you crave something sweet and fresh.

The image shows nine square pieces of light pink dessert with tiny red specks on a marbled white cutting board, arranged in a 3x3 grid with one piece slightly separated on the lower right. Each dessert piece has one smooth layer with a creamy texture and a pink color that looks like strawberry flavor. There are fresh, whole strawberries and halved strawberries with green leaves placed around the board, with one half strawberry placed on the top of one of the pieces. The cutting board is on a coral-colored cloth, and the whole scene sits on a white marbled surface. Photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 1 box strawberry cake mix with pudding in the mix (we used Pillsbury)
  • 2 large eggs
  • 1/3 cup vegetable or canola oil (80 ml)
  • 1 teaspoon vanilla extract (5 ml)
  • 3/4 cup powdered sugar (90g)
  • 2 tablespoons strawberry preserves (40g; Bonne Maman recommended)
  • 1 ½ tablespoons milk (22 ml)
  • 1 tablespoon cream cheese (15g; optional)

Instructions

  1. Step 1: Preheat your oven to 350 degrees F. Spray an 8×8-inch pan with nonstick spray or line it with foil or parchment paper. Set aside.
  2. Step 2: In a large bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Mix thoroughly using a spoon or electric mixer until well blended.
  3. Step 3: Press the batter evenly into the prepared pan. Bake for 18 to 22 minutes, or until just done when tested with a toothpick. Let the brownies cool completely before frosting.
  4. Step 4: For the frosting, whisk together powdered sugar, strawberry preserves, milk, and cream cheese if using, in a small bowl until smooth and creamy.
  5. Step 5: Spread the strawberry frosting evenly over the cooled brownies. Cut into squares and serve.

Tips & Variations

  • For extra strawberry flavor, swirl a spoonful of preserves into the batter before baking.
  • If you prefer a dairy-free frosting, omit the cream cheese and add a touch more milk for consistency.
  • Use fresh strawberries chopped finely to mix into the frosting for added texture.

Storage

Store the strawberry brownies in an airtight container in the refrigerator for up to 4 days. Bring to room temperature before serving for best flavor. They can be frozen without frosting for up to 2 months; thaw overnight in the fridge before frosting and serving.

How to Serve

Two square pieces of pink cake are stacked on a white marbled surface, with the top piece showing a bite taken out. Each piece has a light pink creamy frosting layer on top that looks smooth and thick. A fresh strawberry slice with green leaves sits on the top piece, adding bright red and green colors. There are some small crumbs around the cakes, and in the slightly blurred background, more strawberries and slices of yellow lemon can be seen, adding a fresh look. photo taken with an iphone --ar 4:5 --v 7

  • The cream cheese in the frosting is optional but adds a tangy richness that complements the strawberry flavor beautifully.
  • Use high-quality strawberry preserves like Bonne Maman for the best taste.
  • Ensure the brownies are completely cool before frosting to prevent the frosting from melting.
