Instructions

  1. Soften Rice Paper Sheets: Soak one rice paper sheet in warm water for 10–15 seconds until it becomes soft and pliable, making it easier to roll without tearing.
  2. Prepare Work Surface: Transfer the softened rice paper onto a damp surface such as a wooden board or a clean, damp towel to prevent sticking while assembling.
  3. Add Filling: In the center of the rice paper, place a small layer of cooked vermicelli noodles, followed by shredded carrots, chopped cabbage, and your choice of protein—either cubed firm tofu or cooked shrimp. Add sliced green onions, grated ginger, minced garlic, soy sauce, Shaoxing wine (or rice vinegar), sesame oil, and sugar as flavor enhancers mixed into the filling for a balanced taste.
