Ingredients

Scale

Cookie Dough

  • 1/2 cup (111g) salted butter
  • 1/2 cup (115g) granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups (228g) all-purpose flour
  • 1 tsp baking powder

Caramel Topping

  • 20 caramels, unwrapped
  • 1 tbsp milk

Chocolate Coating

  • 2 cups (400g) milk chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the cookies.
  2. Cream Butter and Sugar: In a bowl, cream together 1/2 cup salted butter and 1/2 cup granulated sugar until the mixture is light and fluffy.
  3. Add Egg and Vanilla: Mix in 1 egg white and 1 teaspoon of vanilla extract until fully incorporated into the butter-sugar mixture.
  4. Combine Dry Ingredients: Add 1 1/2 cups all-purpose flour and 1 teaspoon baking powder to the wet ingredients and mix thoroughly until a smooth dough forms.
  5. Shape Cookies: Roll out the dough to a thickness of about 1/4 to 1/2 inch. Use a round cookie cutter to cut out circles, then transfer these onto an ungreased baking pan.
  6. Bake Cookies: Bake the cookies at 350°F for 6-8 minutes until they are puffy and no longer glossy on top. Remove from the oven and transfer to a wire rack to cool completely.
  7. Prepare Caramel: While the cookies cool, microwave 20 unwrapped caramels with 1 tablespoon milk for 1 minute, stirring at the 30-second mark. Stir until the caramel mixture is smooth and creamy.
  8. Apply Caramel: Carefully spoon a few teaspoons of the warm caramel onto each cooled cookie, spreading it nearly to the edges. Place the cookies in the fridge for 10-15 minutes or until the caramel is completely set and cold.
  9. Melt Chocolate: Melt 2 cups of milk chocolate chips in 30-second intervals in the microwave, stirring between each until smooth and fully melted.
  10. Coat Cookies: Spread a thin layer of melted chocolate over the caramel topping on each cookie. Allow the chocolate layer to cool and set before serving for best texture and taste.

Notes

  • Make sure not to overbake the cookies; they should be puffy and slightly soft when removed from the oven.
  • Chilling the caramel-covered cookies helps the caramel set properly for easier handling.
  • Use high-quality milk chocolate chips for a richer flavor.
  • Store the Twix Cookies in an airtight container in the refrigerator to keep the caramel and chocolate layers firm.
  • For a stronger vanilla flavor, you can use vanilla bean paste instead of extract.
