Instructions

  1. Cook Vegan Proteins: Prepare the tofu scramble or vegan egg patties and vegan bacon according to their package instructions, ensuring they are heated through and nicely cooked.
  2. Toast Bagels with Cheese: Slice the bagels in half horizontally. Place a slice of vegan cheese on the cut side of each bottom half. Toast them in a toaster oven until the bagels are golden and the cheese slightly melts.
  3. Assemble the Sandwich: On the cheesy side of each toasted bagel bottom, layer the cooked tofu scramble or vegan egg patty, add the cooked vegan bacon, and top with slices of avocado, fresh arugula, and a drizzle of hot sauce as desired. Cover with the bagel top half and serve immediately.
