Instructions

  1. Preheat: Preheat the oven to 350 degrees Fahrenheit to prepare for baking the casserole.
  2. Sauté Mushrooms: Heat a cast iron pan over medium heat and add 1 tablespoon of avocado oil. Once the oil is hot, add the sliced mushrooms. Cook while tossing occasionally until the mushrooms are soft and nicely browned, about 7 minutes. Remove from the pan and set aside.
  3. Make the Sauce: Reduce heat to medium-low and add 3 tablespoons of vegan butter to the pan. When melted, whisk in 3 tablespoons of all-purpose flour to create a roux. Gradually add ½ cup vegetable stock and ½ cup unsweetened soy milk while whisking continuously to avoid lumps. Cook for 1-2 minutes until the sauce thickens slightly. Stir in ½ teaspoon garlic salt and ¼ teaspoon ground black pepper.
  4. Combine Ingredients: Return the cooked mushrooms to the pan. Add the drained green beans and mix everything together well. Season with additional salt and pepper to taste.
  5. Prepare for Baking: If your pan is oven-safe, you can bake the casserole directly in it. Otherwise, transfer the green bean mixture into a suitable baking dish. Evenly distribute 1 ⅓ cups of French fried onions over the top.
  6. Bake: Place the casserole in the center rack of the preheated oven. Bake at 350 degrees Fahrenheit for 25 to 30 minutes, until the onions are golden brown and the edges are bubbly.
