Feta Dip
- 8 ounces cow’s milk feta cheese
- 1 teaspoon fresh lemon juice
- 2 tablespoons whole milk (or plain Greek yogurt)
- 2 tablespoons olive oil
Hot Honey
- ¼ cup honey
- 1 teaspoon red pepper flakes

- Prepare the Feta: Break the block of feta cheese into about 8 pieces and place them in a fine mesh strainer. Rinse briefly under cold water to reduce saltiness, then let it drain well.
- Make the Hot Honey: In a small saucepan, combine the honey and red pepper flakes. Warm it over medium heat until the honey just begins to simmer. Remove from heat and let it cool while you prepare the dip.
- Whip the Feta: Transfer the drained feta into the food processor bowl. Add fresh lemon juice and whole milk or Greek yogurt. Process until the mixture looks like ricotta or cottage cheese in texture. With the processor running, slowly drizzle in olive oil, then scrape the bowl and process again until the mixture is smooth and creamy, resembling Greek yogurt.
- Assemble and Serve: Spoon the whipped feta dip into a serving bowl and create a swirl pattern on top. Drizzle the cooled hot honey over the dip. Garnish with chopped pistachios and serve immediately alongside toasted baguette slices.
